A great collection of summer tastes in this season's menu at EMP! Chef Humm's creations were colorful, vibrant, light, and playful. The finest ingredients of local New York State farms were represented, with a lot of purveyors coming from Long Island. In addition to the new and exciting tastes, a lot of the classics (foie gras, and caviar) were offered in a summer tone. Some of the highlights were the preparations for cucumber and tomato, which were pure refreshing explosions! Theatrical presentations, and deception dominated the experience once again! Chef Humm's brilliance can be seen in his new dish involving every component of the sunflower, which is also the main flower decorating the dining hall currently. The pork dish (grilled with watermelon) was perfect in every aspect! The sweet creation of the night made for an impeccable finish to a great experience! The desert following the cheese course utilized the whey, which was left after the creation of the cheese, forming a nice transition. The final desert forcing the guests to guess the milk with which each chocolate was made gave a playful and relaxing tone to the night. Service was once again impeccable. Friendly and engaging the staff were eager to please the needs of every guest. Once again an unforgettable experience!
