11 Madison Park (EMP) has evolved into an amazing restaurant over the years. It's current menu is a celebration of the culinary history and traditions of New York. It is a canvas of flavors, smells, textures, and images that will activate the limbic system of the locals and make them re-experience candid memories of food. Visitors from out of town will get a breathtaking tour of the city's finest flavors, and a great incentive to explore these traditions further. For us the most powerful emotions were elicited by the caviar dish, which brought back intense memories of bagels and smoked fish from Rush and Daughters. And this nostalgia feeling is what makes an experience unique and personal... The menu starts with savory black and white cookies, only to finish with identically looking but now sweet cookies. This creates a full circle with an image that is attached to New York... Chef Humm uses theatrical presentations (roasted squash, table-side grinding of carrots to make tartar, picnic course, etc) to set the stage for almost all his dishes, and submerges you to a world you don't want to escape from.
